Winemaker Notes

Il BioSelvatico's Toscana Rosso is a pure expression of Sangiovese, crafted with minimal intervention to highlight the grape's natural character. The wine is produced from organically and biodynamically farmed vineyards, with harvests conducted over a month to capture varying ripeness levels. Fermentation occurs with whole clusters in open-top tonneaux, followed by aging in oak and concrete to enhance complexity. The result is a wine with aromas of dark cherries, violets, and earthy undertones, complemented by a vibrant acidity and fine tannins. Serve at 16-18°C (60-64°F).


The Story

Il BioSelvatico is a young winery located near Arezzo in Tuscany, founded by Filippo Volpi, a former chef with a profound passion for wine. Drawing inspiration from 1950s Burgundy, Filippo employs traditional methods both in the vineyard and cellar. The estate's 4.2-hectare vineyard is farmed without chemicals, embracing organic and biodynamic practices to maintain an intact ecosystem. The unique approach of multiple micro-harvests and whole-cluster fermentation results in a Sangiovese that authentically reflects its terroir. This dedication to natural winemaking has positioned Il BioSelvatico as a rising star in the Tuscan wine scene.
