Winemaker Notes
Grapes of Pinot Noir obtained from vineyards planted in 1994 with high density: about 5,000 plants per hectare. Harvest at the end of August.
Fermentation at controlled temperature of 22° Celsius, in stainless steel tanks in order to obtain a concentration of aromas. At the end of the fermentation the wine refines in stainless steel tanks for about 6 months and in April of the following year it is bottled.
Slow refermentation and the refinement on the lees will continue for 72 months. Bottles produced: only 2,000.
The Story
Cascina Baricchi is located in Neviglie (Langhe) and Natale Simonetta has been at the helm since 1996, when he took over the reins of what had been the family business since 1979. His guide led to an important qualitative growth; the new ideas have made possible to combine tradition and innovation, resulting in a production with a strong personal character. Most consider him a crazy guy in the region.
Alongside the classic Langa wines there is a whole new world of very successful "experiments" with non-traditional grapes in the area, including the very special Classic Method, or sparkling wine made in the style of Champagne.
This sparkling wine combines a very expressive and aromatic bouquet, a velvety drink and a marked and balanced sapid and acidic vein. A champion Pinot Noir in the homeland of Nebbiolo - hence its French name - et voilà!
